Summer Fruit Salad with Cilantro

I love fruit salads with unexpected twists.  One of the best salads I've ever had was a simple mango salsa. 

Mango Salsa
  • 4 mangoes chopped into bite sized pieces
  • 1 bunch green onions chopped finely
  • 1 bunch cilantro chopped finely
  • Juice of 1 or 2 limes
Mix and serve.  It's good if it sits for a couple of hours, too.    Delicious with tortilla chips or as a side dish all on its own.

We took the mango salsa recipe and dressed it up with pineapple and strawberries.  The strawberries, onions and cilantro came out of our own garden.


Summer Fruit Salad with Cilantro
  • 4 mangoes, chopped into bite sized pieces
  • 1 fresh pineapple,  cored and chopped into bite sized pieces
  • 2 cups fresh strawberries, sliced
  • 1 bunch green onions, chopped finely
  • 1 large bunch cilantro chopped finely
  • Juice of 1 or 2 limes
Mix and serve.


  1. That looks gorgeous! If I weren't too lazy to go get mangoes I'd try this. In fact, I will book mark it for when it's no longer too hot to step on asphalt and try it then! Looks the photo. Is that one of your towels I spy? Howe are the bees doing in all this heat? Bet their little wings are just worn out.

    1. Yep, that's one of my towels. I love that towel. The bees are doing fine. They've discovered the veg garden, so I should have tons of squash and cukes this year [one of the reasons I wanted bees!] They've also discovered the hummingbird feeder, where they regularly chase off the birds. I think they've settled down to a schedule: the birds get it sun up till about 10:30am, then the bees are ALL OVER IT. Then they share, bees on one side, birds on the other until evening, then the bees let the birds have it. It's pretty fun to watch.

  3. I love that hummingbird/bee cooperation! That's great.
    Salad looks lovely. Lime and cilantro are two of my faves. I'm still learning to cut mango without losing half of it to the pit. You've got a nice eclectic fruit combo going there. Going to have to try it.
